Spiritual - Gary Maddox

As I started the Jubilee transformation it was like taking a dunk in a cold lake or a first mountain flight in a hang glider. You commit. You jump and you deal with any adversity that comes your way but if you jump going back is not an option.

I used to sleep to 6 AM and hurry to shower and get to work. Now I am up at 4:30, out the door to shuffle at 4:45 for an hour. I’m not a health guy or even an exercise person, I just decided to try this. It took some getting used to but all of this aside I discovered something else.

It’s always dark so I have seen the stars in a way that I have not seen in some time. Twice the milky way has been so pronounced that I just stop and look. I’ve been in light rain, heavy fog, strong wind and calm coolness as I shuffle along.

But the best thing has been the reminder of nature and my place in the flow. Not too much Zen, not too much new age thought. Just my place. I’ve lost people over the years as we all have and will but...

“Just wanted to share something. I have posted a few times about the weight I’ve lost doing the Jubilee Transformation. I’ve now lost about 60 pounds of fat, and gained 12 pounds of muscle and hydration, in about three months.

But that’s not all. I’ve come off of four medications. Two antidepressants, high blood pressure medication and cholesterol medication. I’m now med free. My blood pressure untreated when I started this was in the 145 over 95 range. Now, off medication it’s usually around 110 over 75. The antidepressants helped with the depression, but suppressed my personality. I’ve always been shy, but on these, I was extremely reserved and quiet. Gary Maddox mmmmm Pizza Recipe

Gary came home with a terrible desire for pizza the other night  and came up with the following.

2 Ezekiel Wheat Free Tortillas

Extra Virgin Olive Oil

1 tbs almond flour

1 tbs part skim mozzarella cheese

¼ Cup tomato sauce

3/4 cup part skim mozzarella cheese

½ tbs garlic powder

½ tbs Italian seasoning

1 tsp onion powder

½ tsp black pepper

½ medium onion diced

2 tbs green pepper diced

Toppings per taste

Meats – Such as sausage or beef should be

squeezed between paper towels while hot to remove

as much fat as possible.

Pepperoni should be of the turkey variety for reduced fat.

 

Lightly coat pizza pan with olive oil, place 1 tortilla in pan and brush lightly with olive oil

Spread almond flour and 1 tbs of cheese evenly over tortilla (provides texture and adhesion)

Place second tortilla over first and lightly brush with olive oil.

Bake at 300 degrees, or less for softer crust, for 20 minutes

Divine Assistance - Dr Todd Rice

Some of you may have heard about John and Dr. Rice’s paths crossing with some ‘divine assistance’. If you didn’t hear today’s show to recap, John was on his way back from Indianapolis, IN to Nashville. Dr. Rice was on his way to Indianapolis to see the Colts play. However there was a torrential downpour and driving conditions were hazardous. Dr. Rice’s car hydroplaned resulting in the crossing of 3 lanes of traffic and massive damage to his vehicle. While his car was totaled Dr. Rice escaped without a scratch. 

Although shaken up a bit, John came to the Dr.‘s assistance and offered him a ride back to Nashville. Not only did he get a ride but John made him the featured guest of the show!

Jumbo shrimp. Airline food. Boneless ribs. Fuzzy logic. Some words just don’t seem to belong together. I’m betting you’d say healthy brownie falls into that category. Au contraire! How do I know that isn’t the case? Because there was a lot of “yumming” in my kitchen as a gaggle of brownie aficionados devoured these. Refined white sugar out; Grade B maple syrup in. See ya white flour; hello almond flour and brown rice flour. Fare-thee-well butter; come-on-down olive oil! Add dark chocolate, walnuts, and cinnamon, and the result is a decadent culinary oxymoron for the ages.

The Half Time Factor - Gary Maddox - Testimony

I am at 44 days into the transformation and tomorrow starts the downhill side. I started at 200 lbs. and am now at 192 which does not sound like a lot of weight loss but according to Tom in my 4 week evaluation I gained 16 lbs. of muscle and lost 24 lbs of fat. I also lost 6.5 inches of girth and hydration is up over 50%. Just like the stories I read before I started the program it’s working and I feel great.

But the best part is going from a 36 inch waist to a 32. Time to go shopping.

It should be noted that 2 weeks in I pretty much lost my left knee which has been problematic since I was a teenager. 3 surgeries and severe arthritis has left it a mess. This cut out not only shuffling but even walking. I continued the diet as well as rising early as usual to work out with weights, twists and a gentle walking in place motion to get my heart rate up. People have had the false impression that if you eat fat it will turn into fat on your body. Appropriate dietary fat intake is crucial to whole body health at the cellular level.
